How to make it

  • Chicken Prep
  • Vertically cut each chicken breast into three long strips.
  • Squeeze the juice of 1 1/2 lemons over them, coating really well. Next coat the breasts with enough olive oil so that the lemon doesn't start to cook the breasts. Next add Italian dressing, garlic powder, salt, pepper, and italian seasonings, enough to coat each strip. Cover tightly or place in bag and let marinate for 30 minutes.
  • Sauce
  • Pour olive oil into a large sauce pan. Add onion to hot oil, and cook till soft. Add diced tomatoes and tomates sauce (the sauce gives a nice texture). Add bbq sauce, garlic powder, pepper, italian seasonings and salt, to taste. Stir and let simmer over low heat.
  • Chicken
  • Take the chicken out of the fridge. Get two large bowls. Beat eggs in one of the bowls. Add flour, salt, garlic powder, pepper, and parmesean cheese to another bowl. Heat oil in a large pan. When hot, dip the strips in the egg, and then the flour mixture, and place in pan. Cook on both sides until center is no longer pink. Repeat until all strips are cooked.
  • Place cooked strips in a large pan, and top with the sauce. Place in 350 degree oven for 15 mintues.
  • Serve over pasta.
  • YUM!
