  • * About chipotle in adobo sauce: I love to use this in place of chili powder whenever I can. The taste is so much more robust. Because you only need one or two per recipe and I hate to waste, I always freeze leftovers spread out flat in a ziplock bag. Then, whenever I need a little, I just break off a chili and put the bag back in the freezer until next time.
  • Brown meat in dutch oven. Season with salt and pepper. Remove and drain on papertowels. In about 1 tsp of the oil, saute onons, celery, bell peppers and garlic until soft. Return meat to pan. Add remaining ingredients. If sauce looks too thick for your taste you can add 1/4 cup of water or beef broth here. Bring to simmer. Cover and place in oven for 1-2 hours to allow flavors to melt into each other. Serve over soft buns. Enjoy!
