Pineapple Lemon Gelatin Salad Recipe
This is so light and refreshing. Nice dish to serve during the holidays or on a hot summer day when you don't want to use the oven. My niece loves this and DEMANDS it everyone she visits.

Ingredients
  • 6 ounce package lemon gelatin
  • 20 ounce can crushed pineapple well drained reserving liquid
  • 2/3 cup whipped heavy cream
  • 1/3 cup mayonnaise
  • 1 cup loosely packed shredded cheddar cheese

Directions
  1. Place gelatin in a large bowl.
  2. In a two cup measuring cup add 1/2 cup pineapple juice and 1 cup water and heat to very hot.
  3. Add heated mixture to gelatin and stir until gelatin is completely dissolved.
  4. Add 1-1/2 cups ice water and stir in well drained pineapple.
  5. Pour gelatin mixture into a rectangular glass container lightly sprayed with cooking spray.
  6. Place in refrigerator until firm.
  7. Mix whipped cream with mayonnaise and blend well.
  8. Just before serving spread cream mixture over gelatin and sprinkle with cheese.
  9. Refrigerate until served.
