Baked Salmon With Sweet Balsamic Sauce

- 1- 2 lbs salmon fillet shopping list
- salt and pepper shopping list
- 2 tbs olive oil shopping list
- 1 cup balsamic vinager shopping list
- 2 cups orange juice shopping list
How to make it
- Preheat oven to 375 F
- Line a baking dish with foil, raise edges of foil (they will wrap around the salmon)
- Pour olive oil onto foil
- Place salmon fillet (s) skin side down on olive oil
- Sprinkle salt and pepper over the top of salmon
- Bring edges of foil up and loosly tent around salmon
- Bake salmon for about 20 - 30 minutes
- While salmon is baking, combine oragne juice and balsamic vinegar in saucepan
- Simmer for 20-30 minutes to reduce - sauce will thicken
- (I also use this time to make up some brown rice)
- Carefully remove salmon from baking dish with large spoon or spatula - try to scoop it up in one piece while leaving skin on foil.
- Place salmon over a bed of brown rice and drizzle with sweet orange balsamic sauce.
