How to make it

  • 1. Preheat oven to 400 degrees F and place paper cups in muffin pan.
  • 2. Mix 1 1/2 cups flour, 3/4 cups flour, salt and baking powder. Place the vegetable oil into a 1 cup measuring cup add the egg and enough milk to fill the cup.
  • 3. Mix this with the flour mixture fold in the blueberries and fill the muffin cups to the top and sprinkle with crumb topping mixture.
  • 4. To make the crumb topping: mix together the 2.3 cup brown sugar, 1/4 cup flour, 1/4 teaspoon cinnamon, 2 teaspoon butter and mix with a fork and sprinkle over muffins before baking.
  • 5. Bake for 20-25 minutes in the preheated oven or until done.

    I have never been able to resist a blueberry muffin and I never will. A pat of sweet cold butter melting on a hot muffin and I am hooked. Sooo good.
