Peanut Guacamole

For the Peanut Guac
- 2 tomatoes (baseball size) peeled (drop in boiling water until the skin splits, remove and cool, the skin peels easily) shopping list
- 2 c dry roasted peanuts shopping list
- 1/2 c peanut butter (smooth or crunchy) shopping list
- 1 teas ground cumin shopping list
- 1/2 teas garlic powder shopping list
- 1 teas dried oregano shopping list
- 2 chipolte chiles + 1 T adobo sauce (canned chipolte) (to taste, you can reduce or add as needed) shopping list
- 1/2 teas salt shopping list
For the Filling
- 3-4 c shredded chicken (we use rotisserie chicken and pick it) shopping list
- 1 red pepper cut into thin strips shopping list
- 1 onion cut into thin strips shopping list
- 1 clove minced garlic shopping list
- 1 1/2 c shredded cheddar cheese shopping list
- 1/2 c chopped cilantro shopping list
- 1/4 c toasted sesame seeds shopping list
- your favorite salsa or hot sauce (my is Pain is Good - Jamaican Style habanero sauce) shopping list
- 12-15 corn tortillas cooked over an open flame or in a hot dry skillet shopping list
How to make it
- Place all the ingredients for the peanut guac in a blender or food processor
- Process until smooth, it really is a paste
- Pour into a pan and heat until warm
- Stir the onion, red peppers, and garlic until tender crisp.
- Spoon 2-3 T of the peanut guac into a tortilla
- Add the shredded chicken
- Top with the fried onion, red pepper, garlic mixture
- Add a sprinkle of cheese
- Top with your salsa or hot sauce
- Enjoy
- Figure on 2-4 tacos per person
- The peanut sauce stores well in the refrigerator, leftovers are great the next day!
