How to make it

  • Place all the ingredients for the peanut guac in a blender or food processor
  • Process until smooth, it really is a paste
  • Pour into a pan and heat until warm
  • Stir the onion, red peppers, and garlic until tender crisp.
  • Spoon 2-3 T of the peanut guac into a tortilla
  • Add the shredded chicken
  • Top with the fried onion, red pepper, garlic mixture
  • Add a sprinkle of cheese
  • Top with your salsa or hot sauce
  • Enjoy
  • Figure on 2-4 tacos per person
  • The peanut sauce stores well in the refrigerator, leftovers are great the next day!
