Turkey Breast With Pomegrantate & Orange Sauce

- 2 1/2 lb or so turkey breast, boned but skin on shopping list
- kosher salt and ground pepper shopping list
- 1/4 cup orange juice shopping list
- zest of one orange (save the organge for the sections) shopping list
- 2 tablespoon good olive oil shopping list
- 1 talbespoon chopped rosemary shopping list
- 1 tablespoon chopped sage shopping list
- 2 talespoon butter (cut into small pieces shopping list
- 1 cup water shopping list
- 3/4 cup promegranate juice shopping list
- 1 pomegranate seeds (cut open and using a wooden spoon in DEEP dish bang the pomegranate and seeds will pop out) shopping list
How to make it
- Heat oven 425 F.
- Season turken both sides with salt and pepper pour over the olive oil and 1/2 of the orange juice, add in the rosemary and sage, tie the breast into a roast.
- In a heavy bottom pan melt the butter, Sear the turkey breast skin side down until golden, flip the breast over and add in the remaing orange juice, water . Place in oven and bake unil it comes to 165 F. Remove from the oven and place the turkey on a cutting board to rest covered for 10 mi.
- Place the pan back on stove Med heat. Add in the Pomegranate juice reduce by 1/2. carve tukey in to thin slices and place on a serving patter srizzle with the sauce and Pamegranate seeds, (sections only no skin) the warm sauce will warm the parmgranate seeds and orange sections.
