How to make it

  • Heat oven 425 F.
  • Season turken both sides with salt and pepper pour over the olive oil and 1/2 of the orange juice, add in the rosemary and sage, tie the breast into a roast.
  • In a heavy bottom pan melt the butter, Sear the turkey breast skin side down until golden, flip the breast over and add in the remaing orange juice, water . Place in oven and bake unil it comes to 165 F. Remove from the oven and place the turkey on a cutting board to rest covered for 10 mi.
  • Place the pan back on stove Med heat. Add in the Pomegranate juice reduce by 1/2. carve tukey in to thin slices and place on a serving patter srizzle with the sauce and Pamegranate seeds, (sections only no skin) the warm sauce will warm the parmgranate seeds and orange sections.
