Ingredients

How to make it

  • In large bowl, combine cereal, flours, gluten and salt.
  • Beat in water and egg whites, adding just enough water to make a stiff dough.
  • Roll dough out on a well-floured surface (or between sheets of waxed paper) to 1/16" thick and allow to stand, uncovered, 1 hour.
  • Using a pizza cutter, slice into 3" ribbons, then stack 5 strips on top of each other and cut crosswise into thirds.
  • Spread noodles in one layer on a lined baking tray and allow to dry 3 hours.
  • Cook noodles in boiling water or chicken broth for no longer than 10 minutes.
