Tex Mex Beef Stew

- 2 lbs stew meat shopping list
- 1 1/2 tsp bottled minced garlic shopping list
- 1/2 c chopped onion shopping list
- 1 med green pepper, chopped shopping list
- 1 can whole kernal corn, drained shopping list
- 1 can black beans, drained and rinsed shopping list
- 1 can chopped stewed tomatoes shopping list
- 1 cup salsa shopping list
- 1 tsp ground cumin shopping list
- salt and pepper to taste shopping list
- optional toppings: shopping list
- shredded cheese, sliced green onions, sour cream, tortilla strips, sliced olives shopping list
How to make it
- Brown beef with garlic, onion and green pepper in a little oil. Transfer to slow cooker.
- Add tomatoes, salsa, corn, beans and spices. Stir to combine.
- Cook on low heat for 6-8 hours or on high 3-4 hours, until meat is tender.
