Apple Cinnamon Rice Pudding

- 3 tablespoons butter shopping list
- 4 medium granny smith apples, peeled, cored and diced in 1/2" cubes shopping list
- 3 tsp ground cinnamon shopping list
- 5 or 6 allspice cloves or 1 tsp ground allspice shopping list
- dash of salt shopping list
- 1 1/2 cups arborio rice shopping list
- 1/2 cup packed brown sugar shopping list
- 4 cups apple juice at room temperature shopping list
- 2 tsp vanilla shopping list
How to make it
- Spray inside of slowcooker with non-stick cooking spray and set aside.
- Melt butter in a large skillet over medium high heat. Add apples, cinnamon, allspice and salt. Cook for 3-5 minutes until apples begin to release their juices.
- Transfer apples to slowcooker and add rice, stirring to coat. Sprinkle brown sugar evenly over mixture. Add apple juice and vanilla.
- Cover and cook on high for 1 1/2 to 2 hours or until all liquid is absorbed.
- Serve warm.
