How to make it

  • cook sausage until no longer pink
  • add potatos,onion, pepper, salt
  • fry until potatoes are browned, about 20 min
  • stir in mushrooms, pour eggs over all.
  • arrange tomato slices on top. top with cheese
  • Cover, cook over med-low, 10-15 min, until eggs are set.
  • Top with sour cream, if desired
