Raspberry Ricotta Parfaits

This would make a lovely Valentine's Day dessert. Serve in parfait glasses or large balloon-shaped wine glasses.
Ingredients
- 1/2 cup ricotta cheese shopping list
- 1/2 cup cream cheese, softened shopping list
- 1/4 cup sugar shopping list
- 2 cups fresh raspberries shopping list
- 1/4 cup raspberry jam, warmed shopping list
- 3/4 cup graham cracker crumbs shopping list
- 1/4 cup Cool Whip, thawed shopping list
- fresh raspberries and mint for garnish, optional shopping list
How to make it
- Combine 1st three ingredients in a small bowl
- Mix with mixer until smooth
- Gently stir together raspberries and jam
- Spoon 1/4 cup raspberry mixture into each of 4 parfait glasses
- Top with 2 T cheese mixture
- Sprinkle 3 T crumbs over cheese mixture
- Repeat with remaining raspberry and cheese mixture
- Top each with 1 T whipped topping
- Chill 2 hours before serving
