Lobster Macaroni And Cheese Topped With Onion Rings

- 1 cup thinly sliced yellow onion shopping list
- 1 1/2 cups buttermilk shopping list
- vegetable oil, for frying shopping list
- 2 cups all purpose flour shopping list
- 1/2 t salt shopping list
- 1/2 t ground black pepper shopping list
- 1 (16oz) package elbow macaroni shopping list
- 2 cups heavy cream shopping list
- 1/2 stick unsalted butter shopping list
- 1 1/2 cups grated American cheese shopping list
- 1 cup grated swiss cheese shopping list
- 1 cup grated cheddar cheese shopping list
- 12 ounces pre-cooked lobster claw and knuckle meat, sliced shopping list
- 1 cup grated parmesan cheese shopping list
How to make it
- Soak onion slices in buttermilk for 2 hours
- Remove and drain well in a strainer
- Preheat oil in a deep fryer to 350 degrees (If you don't have a deep fryer, use 3/4 inch of oil in a medium sized frying pan)
- Stir together flour, salt and pepper
- Toss onion rings in the flour mixture just to coat
- Toss coated onions in a mesh strainer to remove excess flour
- Fry onion rings in batches until golden, about 3-5 minutes
- Set aside on paper towels to drain
- Preheat oven to 350 degrees
- Cook macaroni according to package directions
- Drain well
- In a large, heavy-bottomed saucepan, combine cream and butter
- Bring to a simmer; cook until thickened
- Stir in the cheeses(except the parm)until smooth
- Stir in macaroni, lobster and parmesan cheese
- Transfer to a 9 by 9 inch casserole dish
- Top with fried onions and bake for 15 minutes or until bubbly
