How to make it

  • Soak onion slices in buttermilk for 2 hours
  • Remove and drain well in a strainer
  • Preheat oil in a deep fryer to 350 degrees (If you don't have a deep fryer, use 3/4 inch of oil in a medium sized frying pan)
  • Stir together flour, salt and pepper
  • Toss onion rings in the flour mixture just to coat
  • Toss coated onions in a mesh strainer to remove excess flour
  • Fry onion rings in batches until golden, about 3-5 minutes
  • Set aside on paper towels to drain
  • Preheat oven to 350 degrees
  • Cook macaroni according to package directions
  • Drain well
  • In a large, heavy-bottomed saucepan, combine cream and butter
  • Bring to a simmer; cook until thickened
  • Stir in the cheeses(except the parm)until smooth
  • Stir in macaroni, lobster and parmesan cheese
  • Transfer to a 9 by 9 inch casserole dish
  • Top with fried onions and bake for 15 minutes or until bubbly
