Seafood Artichoke Pasta

- 1 lb peeled deveined shrimp shopping list
- 1 can chopped clams, with juice shopping list
- 1 14 oz can stewed Italian tomatoes shopping list
- 1 14 oz can diced tomatoes (or two large tomatoes diced) shopping list
- 1 14 oz artichokes (marinated or unmarinated) shopping list
- 1 medium yellow onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 4 tsp dried basil shopping list
- 2 tsp dried oregano shopping list
- 1/4 tsp red pepper flakes shopping list
- Pinch kosher salt, fresh cracked pepper shopping list
- 1 cup reserved pasta water shopping list
- spaghetti or angel hair pasta shopping list
- 1-2 tsp olive oil shopping list
- parmesan cheese shopping list
How to make it
- Boil water and salt liberally. Cook pasta until al dente and drain, making sure to reserve 1 cup of pasta water.
- Coat the bottom of the same pasta pot with olive oil and add onions and garlic. Saute until tender (3-5 minutes) and add tomatoes, artichoke, basil, oregano, red pepper, 1/2 cup of reserved pasta water and clam juice. Bring to a simmer and reduce heat to low. Once sauce reduces by half (15-20 min), add clams and shrimp. Once shrimp are cooked (around 5 minutes), add pasta and turn to coat.
- Top with Parmesan cheese and enjoy!
