Great omelet. With the combination of nuts, potato, onion, herbs, sour cream and cheese how can you possibly go wrong?

Ingredients
  • 4 slices bacon
  • 8 walnut halves
  • 1 small potato diced
  • 1/4 cup diced white onion
  • 2 tablespoons butter
  • 4 eggs slightly beaten
  • 1/4 diced Swiss cheese
  • 1 tablespoons minced parsley
  • 1/4 cup sour cream
  • 1 teaspoon salt

Directions
  1. In a wide frying pan cook bacon over medium heat until crisp and browned.
  2. Remove bacon and drain well then break into pieces and set aside.
  3. To drippings add walnuts and cook stirring over medium heat for 2 minutes then set aside.
  4. Discard all but 2 tablespoons of drippings.
  5. Add potatoes and onions and cook stirring over medium low heat for 10 minutes.
  6. Remove from pan and keep warm.
  7. Clean frying pan to remove any browned particles then melt butter over medium low heat.
  8. Pour in eggs pushing from bottom as they set allowing uncooked portion to flow down under.
  9. Sprinkle with potatoes, cheese, bacon, parsley and salt.
  10. Mound sour cream in the center of omelet then garnish with toasted walnuts.
  11. Cut into wedges and serve.
