Country Omelet

- 4 slices bacon shopping list
- 8 walnut halves shopping list
- 1 small potato diced shopping list
- 1/4 cup diced white onion shopping list
- 2 tablespoons butter shopping list
- 4 eggs slightly beaten shopping list
- 1/4 diced swiss cheese shopping list
- 1 tablespoons minced parsley shopping list
- 1/4 cup sour cream shopping list
- 1 teaspoon salt shopping list
How to make it
- In a wide frying pan cook bacon over medium heat until crisp and browned.
- Remove bacon and drain well then break into pieces and set aside.
- To drippings add walnuts and cook stirring over medium heat for 2 minutes then set aside.
- Discard all but 2 tablespoons of drippings.
- Add potatoes and onions and cook stirring over medium low heat for 10 minutes.
- Remove from pan and keep warm.
- Clean frying pan to remove any browned particles then melt butter over medium low heat.
- Pour in eggs pushing from bottom as they set allowing uncooked portion to flow down under.
- Sprinkle with potatoes, cheese, bacon, parsley and salt.
- Mound sour cream in the center of omelet then garnish with toasted walnuts.
- Cut into wedges and serve.
