How to make it

  • In a wide frying pan cook bacon over medium heat until crisp and browned.
  • Remove bacon and drain well then break into pieces and set aside.
  • To drippings add walnuts and cook stirring over medium heat for 2 minutes then set aside.
  • Discard all but 2 tablespoons of drippings.
  • Add potatoes and onions and cook stirring over medium low heat for 10 minutes.
  • Remove from pan and keep warm.
  • Clean frying pan to remove any browned particles then melt butter over medium low heat.
  • Pour in eggs pushing from bottom as they set allowing uncooked portion to flow down under.
  • Sprinkle with potatoes, cheese, bacon, parsley and salt.
  • Mound sour cream in the center of omelet then garnish with toasted walnuts.
  • Cut into wedges and serve.
