Bourbon Chicken Skewers

This was my entry into our family's latest cooking competition. In this round, all recipes had to include alcohol in some form. It was well received but lost out to a homemade vodka cream sauce. Note - cooking time does not include marinating time.
Ingredients
- 2 lbs chicken tenderloins shopping list
- 1 lb bacon shopping list
- 1 C bourbon shopping list
- 1/2 C olive oil shopping list
- 2T cider vinegar shopping list
- 1/4 C minced red onion shopping list
- 1T Dijon mustard shopping list
- cherry tomatoes shopping list
- sour cream shopping list
- Crumbled blue cheese shopping list
How to make it
- Mix all ingredients except sour cream, tomatoes, blue cheese, chicken & bacon in a baking pan.
- Cut bacon slices in half.
- Cut chicken tenderloins into pieces about 3 in. long.
- Wrap chicken in bacon slices and thread onto skewers.
- Put assembled chicken into marinade arranged so skewers are not completely submerged but chicken is and marinate (preferably) overnight .
- Preheat oven to 400. Arrange skewers on rimmed baking sheet.
- Bake about 20 min, checking frequently & turning once during baking.
- Mix sour cream (about a cup) with blue cheese to taste, add salt, pepper & garlic if desired.
- Thread cherry tomatoes on the ends of skewers & arrange on platter with sour cream dip on the side.
