Mole Marinade

- ½ cup soy sauce shopping list
- ⅓ cup olive oil shopping list
- 2 tbsp dark brown sugar shopping list
- 4-6 chipotle peppers, finely chopped shopping list
- 4 tsp cocoa powder shopping list
- 1 ½ tsp Mexican oregano, dried or 1 tblsp fresh shopping list
- 4 medium garlic cloves , minced, about 4 tsp shopping list
- 1 tsp ground black pepper shopping list
- 2 tbsp lime juice, from one or two limes shopping list
- 2 lb. steak or chicken, chicken legs worked well. shopping list
How to make it
- 1.Combine soy, oil, sugar, chipotle, cocoa, oregano, garlic, and pepper in medium bowl. Remove 1/4 cup of marinade and combine with lime juice in small bowl and set aside. (I put lime juice in whole marinade)
- 2.Combine remaining marinade and meat in gallon-size zipper-lock bag; press out as much air as possible and seal bag. Refrigerate 1 hour, flipping bag after 30 minutes to ensure that meat marinates evenly.
