How to make it

  • Cook onion in olive oil until soft, about 5 minutes.
  • Add curry powder and garlic and continue cooking 1 minute.
  • Add the lentils, bay leaf and water. Bring to a boil, then reduce heat and simmer 10 minutes.
  • Add cubed potato and fire-roasted tomatoes with juice. Return to boil and continue simmering 20-30 minutes until lentils and potatoes are tender.
  • Garnish with fresh cilantro and yogurt/sour cream if desired.
