Sprouts Potato Salad Recipe
I LOVE potato salad! I had a few different recipes laying around, none seemed totally satisfying, so I took the bits I liked and put them together. Sort of traditional, sort of german - its a mishmosh.

Ingredients
  • 4 cups cubed potato
  • 4 rashes bacon, diced
  • 1/2 onion, diced
  • 1/2 green or red capsicum (or mix), diced
  • 1 clove garlic (a big one), crushed
  • 3/4 cups of mayo
  • 3 tsp dijon mustard
  • 2 hard boiled eggs, chopped
  • 3 sticks celery
  • fresh parsley, chopped
  • salt and pepper

Directions
  1. Cook potatoes in boiling salted water until soft, but not mushy. Drain and set aside to cool.
  2. While potatoes are cooking, fry bacon until almost crisp. Add onion, garlic and capsicum, and fry until capsicum begins to soften. Remove from heat.
  3. Add bacon mix to potatoes, toss gently and add pepper to season. Leave to cool.
  4. When ready to serve, mix mayo and dijon. Add half the chopped parsly, egg and celery. Add half the mayo mix and toss gently. Add remaining mixes and toss.

This looks really good. I think mustard is a must in potato salad!
