Mexican Casserole

- 1 pound of lean ground beef shopping list
- 2 cups salsa shopping list
- 1 (16 ounce) black beans, drained and rinsed shopping list
- 3 cups tortilla chips, crushed shopping list
- 1 (2ounce) can black olives optional shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup chopped fresh tomato or 1/2 can of tinned tomatoes shopping list
- 2 cups shredded cheddar cheese shopping list
- 2 tablespoons green chilies shopping list
- 3 tablespoons homemade taco seasoning or 1 packet already made shopping list
- 1 tablespoon minced garlic or to your taste shopping list
How to make it
- 1. Preheat oven to 350 degrees F.
- 2. In a skillet over medium heat, cook ground beef until no longer pink. Stir in the salsa, reduce heat and simmer for 20 minutes until all liquid is absorbed. Stir in the beans, green chillies, onions, tomato and the taco seasoning. Olives if you want them.
- 3. Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish and then spoon the beef mixture over chips and then top with the cheddar cheese.
- 4. Bake in the preheated oven for 30 minutes or until hop and bubbly.
- Top with sour cream and any other topping you like
