Provençale Breakfast Toast!

- 3-4 slices of whole grain bread shopping list
- salt-free butter shopping list
- Tomato Pesto shopping list
- zucchini, sliced, boiled and drained shopping list
- sun-dried tomatoes blanched in boiling water and drained shopping list
- Grated mozzarella or swiss cheese shopping list
How to make it
- Toast the bread lightly, then butter
- Lightly spread some tomato pesto
- Stack the zucchini and sun-dried tomatoes on each piece of toast to your liking, cover with grated cheese
- Let broil on MED or HIGH for 1-2 minutes or until cheese is melted and just starting to turn golden brown (be sure not to burn the bread though!)
- ... Unless you like burnt toast :)
- Garnish with sliced carrot, fresh parsley and green onion, serve hot
