How to make it

  • Heat olive oil in saute pan, add onion and cook until translucent.
  • Add pistachios and enough oil to moisten them, it should have a pastey consistency
  • Cook, stirring over medium heat for about one minute
  • Add cream, stir until heated through, then remove from heat
  • Add crushed pepper, garlic, black pepper and salt (all to taste)
  • When the pasta is al dente, drain well and add to saute pan with the sauce. Toss to coat and serve immediately.
  • Top with grated cheese.
  • Another good thing to add to this, I didn't have them on hand, are roasted pine nuts.. YUMM!!!
