Farfalle With Pistachio Cream Sauce

- One box for baby Farfalle (any pasta will do actually, but I had these on hand. shopping list
- 1/2 medium onion, chopped shopping list
- 1 1/4c. ground pistachio (unsalted, ground in a blender) shopping list
- 2 T. olive oil shopping list
- 1 3/4 C. heavy cream (according to taste) shopping list
- crushed red pepper shopping list
- salt shopping list
- fresh garlic, crushed shopping list
- fresh ground black pepper shopping list
How to make it
- Heat olive oil in saute pan, add onion and cook until translucent.
- Add pistachios and enough oil to moisten them, it should have a pastey consistency
- Cook, stirring over medium heat for about one minute
- Add cream, stir until heated through, then remove from heat
- Add crushed pepper, garlic, black pepper and salt (all to taste)
- When the pasta is al dente, drain well and add to saute pan with the sauce. Toss to coat and serve immediately.
- Top with grated cheese.
- Another good thing to add to this, I didn't have them on hand, are roasted pine nuts.. YUMM!!!
