How to make it

  • 1. Preheat oven to 400'
  • 2. Skin and trim fat from chicken pieces
  • 3. Heat 12" skillet over med. heat. In a bowl,,beat eggs and parmesan. Place breadcrumbs in pie plate.
  • 4. Pour enough olive oil to come 1/4" the inside of skillet. Heat till hot but not smoking-gentle med-high
  • 5. Dip each piece of chicken in egg mixture,allowing excess to drip back into bowl,then coat in breadcrumbs..Lay the chicken in the hot oil,allowing to become golden brown on each side-don't cook further,it will finish in the oven.
  • 6.Place chicken in 9x12" baking dish. Pour liquid from vinegar peppers over chicken and bake 10 mins. Remove chicken from oven and add the peppers,tucking in and around pieces of chicken. Return to oven,reduce heat to 350" and bake till chicken is cooked and juices run clear,about 30 mins. longer.
  • 7.Serve chicken plattered with peppers and pan juices.
