Salty's Beets With Carrots And Mushrooms

- 3-4 medium beets, peeled and diced shopping list
- 3-4 large carrots, peeled and cut shopping list
- 8oz white mushrroms, washed (cut if large) shopping list
- 1 medium sweet onion, chopped shopping list
- 2 Tbls olive oil shopping list
- 1 Tbls butter shopping list
- 2 tsp sugar shopping list
- salt and ground black pepper to taste shopping list
- water for cooking shopping list
How to make it
- Bring water and sugar to a boil in saucepan.
- Add diced beets and cut carrots and cook until fork tender.
- Drain and set aside.
- In a medium saute pan, melt butter in olive oil.
- Add chopped onion and saute until onions begin to clear.
- Add mushrooms and continue to saute until mushrooms are tender.
- Add cooked beets and carrots and continue to saute until heated.
- Serve hot as a side dish.
