How to make it

  • Preheat oven to 400
  • Remove core and seeds from peppers. Cut off both ends (chop for adding to meat)
  • Cut each pepper into 3 (1") rings, place on baking sheet
  • In large bowl, add all ingredients except balance of tomatoes and oil for pan
  • Heat about 1-2 tbsp oil in frying pan (one that you can put in an oven)
  • Press meatloaf mixture evenly into pepper rings and over medium high heat saute pepper/meat rings on each side for about 5 minutes in heated skillet
  • Add remaining tomatoes to skillet bring to boil.
  • Add salt & pepper for taste
  • Put in preheated oven (covered) for about 20-30 minutes till heated and cooked thru
  • Serve over mashed potatoes, rice or pasta
  • Great as leftovers and reheated (to reheat I added a 14 oz can of diced or crushed tomatoes)
