Pan Fried Meatloaf In Tricolor Peppers

- 1 green bell pepper shopping list
- 1 red bell pepper shopping list
- 1 orange, or yellow bell pepper (you choice) shopping list
- 1/2 pound ground beef shopping list
- 1/2 pound ground veal, chicken or turkey (your choice or all beef) shopping list
- 2 slices bread, cut into cubes shopping list
- 1 (28 oz) can crused tomatoes with basil (separate 1/2 cup to be added to meat shopping list
- 2 garlic cloves minced shopping list
- 1 egg shopping list
- 1 small onion choppped shopping list
- 1 tbsp dried sage shopping list
- 1 tsp Worchestire Sauce shopping list
- 1 tsp hot sauce shopping list
- salt & pepper to taste shopping list
- 1 tsp smoked paprika shopping list
- chopped left over of peppers shopping list
- 2 cups Shredded cheese shopping list
- 1/4 cup parmesan cheese shopping list
- 1 tbsp oil shopping list
- oil for pan shopping list
How to make it
- Preheat oven to 400
- Remove core and seeds from peppers. Cut off both ends (chop for adding to meat)
- Cut each pepper into 3 (1") rings, place on baking sheet
- In large bowl, add all ingredients except balance of tomatoes and oil for pan
- Heat about 1-2 tbsp oil in frying pan (one that you can put in an oven)
- Press meatloaf mixture evenly into pepper rings and over medium high heat saute pepper/meat rings on each side for about 5 minutes in heated skillet
- Add remaining tomatoes to skillet bring to boil.
- Add salt & pepper for taste
- Put in preheated oven (covered) for about 20-30 minutes till heated and cooked thru
- Serve over mashed potatoes, rice or pasta
- Great as leftovers and reheated (to reheat I added a 14 oz can of diced or crushed tomatoes)
