Vegetable & Cheese Frittata

- 1 cup of diced red/yellow/orange peppers shopping list
- 1 cup of red onions diced shopping list
- 4 baby red potatoes washed, and sliced thinly shopping list
- 1 zucchini washed, sliced and chopped small shopping list
- 1/2 lb sausage meat or 6 slices of cooked bacon crumbled shopping list
- 6 eggs shopping list
- 1 cup cheddar cheese shopping list
- 1/2 cup parmesan cheese shopping list
- salt & pepper shopping list
- Pinch of red peper flakes (optional) shopping list
- 1 teaspoon parsley shopping list
- vegetable or olive oil shopping list
How to make it
- 1. Using a large frying pan place a tablespoon oil add the sliced red potatoes and cook until soft and add the sausage meat until that is done about 10 minutes and then add the rest of the veggies and cook through for about another 10 minutes.
- 2. In a bowl beat the eggs and then add to the pan along with the cheeses, parsley, salt and pepper.
- 3. you can add a little more oil if needed you dont want it to stick
- 4. I then place the pan in a preheated 350 degree oven for about 10 minutes or until the eggs are baked through then remove fromoven and sprinkle with red pepper flakes and parsley See Photo
