How to make it

  • 1 Sift the flour, salt and spices into a bowl and rub in the butter.
  • 2 Add the yeast and sugar to the warm milk and when frothy, beat in the eggs.
  • 3 Make a well in the centre of the flour and butter mixture and pour in the liquid. Turn out and knead lightly. The dough should be quite wet.
  • 4 Leave in a warm place to rise (about 20 minutes).
  • 5 Preheat the oven to 200°C. Knock back and knead in the fruit and orange zest. Shape into 5cm diameter balls and place on a baking tray lined with baking paper and sprinkled with flour. Allow to rise for 15 minutes.
  • 6 Combine the ingredients for the cross and pipe over the tops of the buns. Bake for 10 minutes or until golden.
  • 7 In the meantime, simmer the sugar and water for the glaze. Brush the buns with the glaze as soon as they come out of the oven. Enjoy fresh from the oven with lashings of butter.

  • Water to bind
  • For the glaze
  • 30ml white sugar
  • 30ml water
