Asparagus And Mushroom Puff Pastry Pie

- 1/2 cup butter shopping list
- 2 bunches fresh asparagus, trimmed and cut into 1 inch pieces shopping list
- 6 cloves garlic, minced shopping list
- 1 pound sliced fresh mushrooms (baby bellas would be good) shopping list
- 1 cup of prepared hollandaise sauce shopping list
- 1 package of frozen puff pastry, thawed (17.25 ounce size) shopping list
- 1 egg white or whole egg shopping list
How to make it
- Preheat oven to 400 degrees and lightly spray the bottom of a 9x13 inch baking dish with pam
- Melt the butter in a large skillet over medium heat and saute the asparagus for about 10 minutes
- Stir in the mushrooms and garlic and cook until the mushrooms are tender
- Set aside
- Prepare sauce according to the package directions
- Stir into mushroom mixture
- Lay one sheet of pastry into the prepared pan, with extra coming up the sides
- Beat the egg and use as an agg wash for the top of the bottom crust. This helps to keep the bottom from getting soggy
- Spread evenly with the mushroom mixture
- Top with the other sheet of pastry and pinch together to seal
- Bake for about 25-30 minutes until the pastry is golden brown
- Cool for a few minutes before serving.
