How to make it

  • Retain the kohlrabi greens and shred about 1/2 cup of the greens. See Photo
  • Shred the kohlrabi and mix in the greens. Microwave these on high for about 90 seconds to soften. Remove and toss with the margarine and let cool a bit so you can handle it to make the patties.
  • Heat the olive oil in a skillet.
  • Mix the remaining ingredients to the microwaved kohlrabi, form into patties and brown in the skillet See Photo. Turn the patty after cooking 3-4 minutes on a side. See Photo

Forget about serving six, I have just wolfed down a whole batch by myself. My mixture was a bit soppy when it went into the frying pan, and I only got one pattie out intact -- mixed the rest into hash which tasted just fine beside a few meatballs. I think I will have to get coconut flour next time and see whether it absorbs liquid better than the wheat flour I used.
