Bayou Dogs

- 3 pounds peeled shrimp shopping list
- 1 dozen oysters shopping list
- 1 pound crab meat shopping list
- 1 large onion chopped shopping list
- 3 cloves garlic minced or crushed shopping list
- 1 cup butter shopping list
- 1 cup flour shopping list
- 6 hot dogs, or sausages shopping list
- 6 buns shopping list
- 2/3 cup chopped parsley shopping list
- 2/3 cup chopped bell pepper shopping list
- 2/3 cup chopped celery shopping list
- salt, pepper to taste shopping list
- 2 teaspoons cayenne shopping list
- 2 tablespoons smoked paprika shopping list
- 1 small can tomato sauce shopping list
How to make it
- On low medium heat combine the butter and flour to make a roux, cooking it to your preferred colour.
- Add the onion and allow it to just brown
- Go down to low and add the bell peppers, garlic, cayenne, smoked paprika and celery, and allow to soften, about 10 minutes
- add the tomato sauce, and go back to low medium for another 10 minutes
- add 3 cups of water and go up to medium for 30 minutes. Normally this is where you'd add the sausage as well but it's gonna be cooked separately in this case.
- add shrimp, parsley, oysters, and crab meat, cook for another 15 minutes or until creamy adjust salt and pepper as needed. At this point you could set up a steaming basket on top of the pot to steam the hot dogs, or you can start them on the grill.
- Toast the buns, do not steam the buns the jambalaya will soak right through if they are not toasted, then put the hot dog/sausage on, and spoon over some jambalaya. Throw on an old KIa Sportage commercial and serve to the Ayees.
