Summer Udon Noodles

- 30 udon noodles Cooked As directed then drained and rinsed with cold water. shopping list
- 1/2 Cup broccoli shopping list
- 2 Tbsp Diced tomato shopping list
- olive oil shopping list
- 1 Large carrot Shredded shopping list
- 1 clove of garlic Minced shopping list
Sauce
- 1 Cap Teriyaki shopping list
- 1 Cap Soy shopping list
- 1/2 Cap rice vinegar shopping list
- 1 Tbsp tomato paste.(Or more if you like.) shopping list
- 1 Cap balsamic vinegar shopping list
- 1-2 Tsp light brown sugar. shopping list
- Splash of olive oil shopping list
How to make it
- Set the noodles on a plate or in a bowl while you do everything else.
- Heat the oil in a pan and add the garlic and mix around for about a minute or two. Add the broccoli and cook down until it is tender. Add the diced tomato and shredded carrot and cook until the flavors have time to blend. Take out and set aside in a seperate bowl/plate from the noodles to cool.
Sauce
- Mix all sauce ingrediants together in a measuring cup and put into same pan as vegetables were in. Add a little water until its consistency is spreadable but not to thin. Cook until heated through. Pour over noodles and vegetables. Your done! Make sure its cool before you serve it or serve it hot if you want. :)
- This is a one person recipe. For two people double the ingredients.
