How to make it

  • In a saucepan cook the quinoa. I usually use two cups water to one cup quinoa or whatever the package directions say. Once it is done, uncover it and let it cool.
  • Take all of the vegetables EXCEPT TOMATOES and put them into a food processor and chop them until they are VERY finely chopped, then transfer to a large bowl.
  • Mix in the ground meat and the two eggs and the quinoa.
  • Form the mixture into a loaf in a pan. (It will look kind of like a football)
  • Put into the oven at 375 degrees for 30 minutes.
  • After 30 minutes pour the can of tomatoes over the meat loaf and put back into the oven for another 30-35 minutes until the meat is about 155 degrees and done.
  • Remove and let it cool and serve and enjoy!
  • NOTE: If the meat is too soggy BEFORE you cook it, mix in a bit of bread crumbs to soak up some of the moisture.
