Meatloaf With Quinoa

- 1 1/2 cups of water for cooking the quinoa shopping list
- 3/4 cups of uncooked quinoa (1 cup uncooked yields about 4 cups cooked) shopping list
- 1 Tbs. olive oil shopping list
- 1 onion chopped shopping list
- 2-3 celery ribs chopped shopping list
- 2-3 carrots chopped shopping list
- 2 garlic cloves chopped shopping list
- 2 pounds ground turkey, beef, lamb or any ground meat shopping list
- 1/2 cup chopped flat leaf parsley shopping list
- a little bit of basil, and oregano and salt and pepper if you like. shopping list
- 2 eggs shopping list
- 2 Tbs. worcestershire sauce if you are using beef or lamb shopping list
- 1 large can of finely diced tomatoes shopping list
- You can also add in chopped mushrooms, olives, peppers or anything else you can find leftover in the fridge! shopping list
How to make it
- In a saucepan cook the quinoa. I usually use two cups water to one cup quinoa or whatever the package directions say. Once it is done, uncover it and let it cool.
- Take all of the vegetables EXCEPT TOMATOES and put them into a food processor and chop them until they are VERY finely chopped, then transfer to a large bowl.
- Mix in the ground meat and the two eggs and the quinoa.
- Form the mixture into a loaf in a pan. (It will look kind of like a football)
- Put into the oven at 375 degrees for 30 minutes.
- After 30 minutes pour the can of tomatoes over the meat loaf and put back into the oven for another 30-35 minutes until the meat is about 155 degrees and done.
- Remove and let it cool and serve and enjoy!
- NOTE: If the meat is too soggy BEFORE you cook it, mix in a bit of bread crumbs to soak up some of the moisture.
