Shrimp Korma And Basmati Rice

- 2 tsp butter shopping list
- 1 c chopped red bell pepper shopping list
- 1/2 c chopped onion shopping list
- 1-1/2 TB flour shopping list
- 1 tsp fresh,grated ginger root shopping list
- 3 garlic cloves,finely chopped shopping list
- 2 tsp Madras curry powder(or whatever curry powder you have) shopping list
- 2 tsp garam masala shopping list
- 1/2 tsp salt,divided shopping list
- 2 c vegetable broth shopping list
- 1/3 c water shopping list
- 1/3 c coconut milk shopping list
- 1/4 c diced tomato shopping list
- 1/4 c frozen green peas shopping list
- 1 lb peeled,deveined large shrimp shopping list
- 4 c hot,cooked basmati rice shopping list
- 1/4 c fat-free plain yogurt(I used Greek) shopping list
How to make it
- 1. Melt butter in Dutch oven over med-high heat. Add bell pepper and onion to pan,saute 2 mins. Add flour,ginger and garlic,cook 1 min,stirring constantly.
- Add curry powder,garam masala,and 1/4 tsp salt;cook 30 seconds,stirring. Stir in broth and 1/3 c water,bring to boil.
- Stir in milk and tomato,reduce heat,simmer 5 mins. Add peas,shrimp and remaining salt,cook 5 mins or till shrimp are done.
- Spoon about 2/3 c rice into bowls. Top each serving with about 1 c shrimp mixture and 2 tsp yogurt.
