How to make it

  • Add corn, tomatoes (undrained), onion, celery, carrots, chickpeas, tomato sauce, chicken broth, water, bay leaves, garlic and seasonings to crock pot
  • Cook on low for 8 hrs (or high for 4 hrs)
  • Add cooked pasta and zucchini about a half hour before serving. See Photo
  • Top with grated Parmesan cheese and fresh basil.

    This is great! A simple, quick soup that can use up any veg you have on hand. I happened to have corn, chick peas and zucchini too so this was perfect!
