Vegetable Minestrone

- 1 cup corn (frozen or canned, drained) shopping list
- 4 stalks celery shopping list
- 1/2 red onion, chopped shopping list
- 1 cup chopped carrots shopping list
- 1 can chickpeas shopping list
- 1 can diced tomatoes (with green chilies if you like a little spice) shopping list
- 2-3 cloves garlic, minced shopping list
- 2 cups chicken broth shopping list
- 1 cup water shopping list
- 3/4 c tomato sauce shopping list
- 1 tbs dried basil shopping list
- 2 bay leaves shopping list
- salt and pepper shopping list
- 2 -3 cups cooked elbow pasta shopping list
- 1 zucchini, chopped shopping list
How to make it
- Add corn, tomatoes (undrained), onion, celery, carrots, chickpeas, tomato sauce, chicken broth, water, bay leaves, garlic and seasonings to crock pot
- Cook on low for 8 hrs (or high for 4 hrs)
- Add cooked pasta and zucchini about a half hour before serving. See Photo
- Top with grated Parmesan cheese and fresh basil.

This is great! A simple, quick soup that can use up any veg you have on hand. I happened to have corn, chick peas and zucchini too so this was perfect!
