    Vegetable Minestrone by Skruzel

    I found this recipe using an ingredient search. It worked perfect since all I had for veg was zucchini and corn, and all I had for canned beans was chick peas. I've never had corn in minestrone before, and it was good!
    I'm not a fan of the floating chick pea skins in soups (unless I'm pureeing it) so I soaked the chick peas in warm water and roughed them up in a colander to get as much of the papery skins off. I doubled up on the soup as well, but since I did that I didn't have any room in my crock pot for the pasta so I served it in the bowls separately.
    The only thing I did differently was sauté the onion and garlic before adding it to the crock pot. And I also sautéed the zucchini before adding it as I like it crispy. (I diced all the veggies small so the kids couldn't pick anything out, lol ;)
    It didn't need any salt as the canned goods and stock were plenty salty. But I did add a little kick of chili flakes when I sautéed the onion and added a pinch of Italian dried herbs to the final dish (on top of the bay leaves and basil called for).
    It was great and I would certainly make it again!! :)
