Lemon Triangles

- 2/3 cup margarine, softened shopping list
- 2 1/2 cups granulated sugar shopping list
- 2 1/3 cups all purpose flour shopping list
- 4 eggs shopping list
- 1/3 cup fresh lemon juice shopping list
- 2 Tbsp grated lemon peel shopping list
- Confectioner's sugar shopping list
How to make it
- Preheat oven to 350 degrees F
- Line 13 x 9 inch baking pan with aluminum foil, then spray with non-stick cooking spray & set aside
- In large bowl with electric mixer, beat margarine and 1/2 cup granulated sugar until light & fluffy ~ about 3 minutes
- Beat in 2 cups flour until fine crumbs form
- Press into prepared pan
- Bake uncovered 20 minutes
- While this layer is baking -
- In medium bowl with electric mixer, beat eggs, remaining 2 cups granulated sugar, remaining 1/3 cup flour, lemon juice & lemon peel for 4 minutes or until light & fluffy
- When the first layer is done baking -
- Remove baked layer from oven and pour second layer over hot baked crust
- Bake an additional 25 minutes or until lemon mixture is just set
- On wire rack, cool completely
- Using foil, lift out of pan
- Spray knife with non-stick cooking spray & cut into triangles
- To serve - Sprinkle generously with confectioner's sugar
