Mocha Meringue Bark

- 1/2 cup almonds shopping list
- 1 teaspoon sugar & 1 /4 cup shopping list
- 4 egg whites shopping list
- pinch salt shopping list
- 1 tablespoon instant expresso powder shopping list
- 1/3 cup mini chocolate chips shopping list
How to make it
- 1. Preheat oven to 200 degrees and line a cookie sheet with parchment paper
- 2. Put 1/4 cup almonds and the 1 teaspoon sugar into food processor and pulse until it resembles cornmeal and finely chop the remaining almonds
- 3. In a mixer beat the egg whites until soft peaks form and in another bowl mix the remaining 1/4 cup of sugar with the expresso powder and with the mixer running on slow add the sugar and expresso mixture until mixed and then fold in the almond flour mixture
- then spread the mixture on lined baking sheet about 1/2 inch thick and sprinkle with almonds and mini chocolate chips
- 4. Bake in the oven for 1 hour and then turn off and leave it in oven for another hour.
