How to make it

  • 1. Preheat oven to 200 degrees and line a cookie sheet with parchment paper
  • 2. Put 1/4 cup almonds and the 1 teaspoon sugar into food processor and pulse until it resembles cornmeal and finely chop the remaining almonds
  • 3. In a mixer beat the egg whites until soft peaks form and in another bowl mix the remaining 1/4 cup of sugar with the expresso powder and with the mixer running on slow add the sugar and expresso mixture until mixed and then fold in the almond flour mixture
  • then spread the mixture on lined baking sheet about 1/2 inch thick and sprinkle with almonds and mini chocolate chips
  • 4. Bake in the oven for 1 hour and then turn off and leave it in oven for another hour.
