Macaroni And Cheese With Cauliflower

- 375 grams macaroni shopping list
- 1 head cauliflower, cut into bite-sized pieces (Replace cauliflower with blanched broccoli or cooked butternut if you prefer) shopping list
- 60 ml butter shopping list
- 3 cups hot milk shopping list
- 1 cup cheddar cheese (or cheese of your choice), grated, plus extra for sprinkling shopping list
- 80 grams flour shopping list
- 1 pinch salt and milled pepper shopping list
How to make it
- 1 Preheat oven to 200ÂșC.
- 2 Cook pasta according to packet instructions. Drain and set aside.
- 3 Blanch cauliflower until just tender. Drain and set aside.
- 4 Melt butter in a saucepan. Add flour and cook for a minute.
- 5 Gradually add milk, stirring continuously, until mixture forms a smooth sauce.
- 6 Add cheese and season. Stir until cheese has melted.
- 7 Toss pasta and cauliflower with sauce and spoon into an ovenproof dish.
- 8 Sprinkle over extra cheese and bake for 25 minutes or until golden.
- Add a bit of crunch by sprinkling with chopped spring onions.
