Ferociously Fruity Muffins

- 1 cup whole wheat flour shopping list
- ½ cup spelt flour shopping list
- ¼ cup buckwheat flour shopping list
- 2 tsp baking powder shopping list
- ½ tbsp baking soda shopping list
- pinch salt shopping list
- 1 tsp pumpkin pie spice shopping list
- ¼ cup brown sugar shopping list
- 1 cup unsweetened apple butter shopping list
- ¼ cup canola oil shopping list
- 1/3 cup water shopping list
- 1 tbsp fresh-grated ginger shopping list
- 1 apple, cored and diced shopping list
- 1/3 cup minced dried apricots shopping list
- 1/3 cup diced candied ginger shopping list
How to make it
- Preheat oven to 400°F, grease or line 12 muffin cups.
- Whisk together flours, baking powder, baking soda, salt, and spice in a medium bowl, set aside.
- In a large bowl beat together sugar, apple butter, oil, water and ginger.
- Add the dry ingredients and stir just to combine, then fold in the apple, apricots and candied ginger.
- Bake for 22 - 24 minutes, then remove to a wire rack and cool completely.
