Roasted Jalapeno Poppers

- 12 large jalaoeno peppers shopping list
- 2 oz. feta cheese shopping list
- 4 oz. cream cheese shopping list
- 4 oz shredded smoked pepper jack,or other hot pepper cheese,or extra-sharp cheddar shopping list
- small handful fresh cilantro,finely chopped shopping list
- 2 TB grated onion. shopping list
How to make it
- Preheat oven to 425'
- Cut 1/3 of each pepper lengthwise and scoop out the seeds. Place on baking sheet. If peppers do not sit flat,slice thin piece off bottom.
- Mash feta,cream cheese,shreeded cheese,cilanto and onion together and stuff peppers.
- Roast for 15 to 18 mins or till peppers are tender and cheese is brown at edges and bubbly.
- This would be delicious in mini sweet peppers also.Also wonderful with a little chorizo mixed in!
