How to make it

  • Preheat oven to 425'
  • Cut 1/3 of each pepper lengthwise and scoop out the seeds. Place on baking sheet. If peppers do not sit flat,slice thin piece off bottom.
  • Mash feta,cream cheese,shreeded cheese,cilanto and onion together and stuff peppers.
  • Roast for 15 to 18 mins or till peppers are tender and cheese is brown at edges and bubbly.
  • This would be delicious in mini sweet peppers also.Also wonderful with a little chorizo mixed in!

    I thought that looked familiar. Then you said Rachel Ray. :-) They did look yummy while she was making them! Now I don't have to try to find it on the Food Network Website! :-)
