Momma's Chicken Salad Made Fancy

- THE SALAD INGREDIENTS: shopping list
- 2 cups cooked chicken (about 3 breasts) shopping list
- 3 hard boiled eggs shopping list
- 1/2 cup celery - finely diced shopping list
- 1 teaspoon onion - finely diced shopping list
- 3 tablespoons sweet relish shopping list
- 1/4 cup Miracle Whip or salad dressing shopping list
- half a medium granny smith apple - diced shopping list
- 1 cup grapes - quartered shopping list
- 1/3 cup walnuts shopping list
- 1 tablespoon lemon juice shopping list
- FOR THE WORKS!: shopping list
- lettuce - if desired on sandwich shopping list
- whole wheat rounds or your favorite breads shopping list
- -OR- your favorite cracker if sandwiches aren't your thing! shopping list
How to make it
- 1. If you're not using leftover chicken the first thing you'll want to do is cook your chicken. It's not in the ingredient list but I like to cook my chicken in a mixture of parsley, sage and cinnamon. Once it's done cooking set it aside to cool.
- 2. Boil your eggs! Remember to leave about 2 inches of water over your eggs. Now while they boil get to cutting those fruits and vegetables!
- 3. In a medium to large mixing bowl combine ingredients:
- -grapes
- -apples
- -lemon juice
- 4. Mix thoroughly and add the following:
- -celery
- -onion
- -chicken (shred with fork prior)
- 5. Add relish and miracle whip/salad dressing and mix well and last but not least add eggs and walnuts!
- 6. Chill and enjoy!
