Dr. Patel's Spicy Peanut Tofu And Spinach

For the Sauce
- 1/2 cup orange juice shopping list
- 1/3 cup smooth peanut butter shopping list
- 1/3 cup broth or water shopping list
- 2 tbsp hot chili garlic sauce shopping list
For the Stir Fry ingredients
- 1 package of extra firm tofu diced in cubes shopping list
- 2 tbsp soy sauce shopping list
- 1/4 tsp red chili powder shopping list
- 1/4 tsp turmeric shopping list
- 1 medium onion sliced shopping list
- 1/2 red bell pepper sliced shopping list
- 4 cups baby spinach shopping list
- 1 tbsp olive oil shopping list
- salt to taste shopping list
How to make it
- Prepare tofu by wrapping in paper towels and pressing extra water out. Cut in cubes.
- In a small bowl add soy sauce, turmeric, and red chili powder and mix together. Add tofu to the bowl and coat it with the mixture.
- In another small bowl, whisk orange juice with peanut butter, broth, and chili garlic sauce. Set aside.
- In a stir fry skillet, heat oil on medium-high, add tofu and cook on each side until it is lightly browned.
- Reduce heat to low-medium, add onion and peppers and stir fry for another 3-5 min until slightly tender.
- Stir in sauce and spinach, cover and cook for another 3 min. If sauce is too thick then you can add water.
- Season with salt.
- Serve on its own or over brown rice, quinoa or rice noodles.
