- DIY chicken Nuggets: shopping list
- • If you can get good ones readymade do that; if not.....or maybe not. shopping list
- • 2 – 2 ½ lbs (1,000 – 1,500g) boned chicken. I buy a bunch of chicken leg quarters and bone them; removing about 2/3 of the skin as well, ± on the skin to taste; but whatever piece of chicken, turkey or ostrich you want to use is okay. shopping list
- • ¼ - ½ cup olive oil. shopping list
- • 1 cup all purpose flour shopping list
- • 1 cup corn meal shopping list
- • A pinch of basil, parsley & sage, to taste. shopping list
- • salt and fresh ground pepper to taste. shopping list
- The Rest: shopping list
- • 4 cups of fresh medium cauliflower or Broccoli florets’ shopping list

How to make it
- Chicken Nuggets:
- 1. Mix the flour & corn meal together; with whatever spices you decide to use.
- 2. Grind the boned chicken, or whatever, and whatever skin you decided to use (if any) very fine. See Photo
- 3. Mold into small patties; these should be and should stay moist.
- 4. Heat the olive oil in a heavy bottomed skillet, cast iron works really well here.
- 5. Dredge the patties in the flour/cornmeal mix.
- 6. Fry these puppies to taste and drain on some paper towels See Photo. I usually cook half of the batch until just crispy but not quite done and freeze them for a later meal. You should get about 24 nuggets out of this; so you’ll have 12 for this meal & 12 for a later Dinner 4/2.
- The rest:
- 1. I just lightly steam the Cauliflower or Broccoli with a pinch of basil and then add a bit of butter and salt + fresh ground pepper; toss lightly. See Photo

- A little mustard dipping sauce is good. If you want to get spiffy try grating just a bit of Havarti cheese over the cauliflower or Broccoli. Don’t make a cheese sauce here. The cheese should be lightly done & a bit hit or miss and not take over. Any cheese you like, of course, but Havarti works very well. As mentioned earlier, a green salad goes well; as do some nice baguettes; or like that.
