Olive Garden's Pasta Y Fagioli Soup

- 2 lb ground beef shopping list
- 2 cup diced onion shopping list
- 1 cup julienned carrot shopping list
- 3 stalks celery, chopped (1 cup) shopping list
- 2 garlic cloves, minced shopping list
- 2 (15 ounce) can red kidney beans (with liquid) shopping list
- 2 (15 ounce) can great northern beans (with liquid) shopping list
- 1 1/2 cans (15 ounce) can tomato sauce shopping list
- 2/3 of a 42 oz bottle v-8 vegetable juice shopping list
- 2 teaspoon vinegar shopping list
- 1 1/2 teaspoons salt shopping list
- 1 1/2 teaspoons oregano shopping list
- 1 1/2 teaspoons basil shopping list
- 1/2 teaspoon pepper shopping list
- 1 teaspoon thyme shopping list
- 2 cartons of beef stock or use beef base shopping list
- 1/2 lb ditali pasta shopping list
How to make it
- In a Large pot, Brown hamburger, drain.
- Then add the onion, celery & carrot. Saute till soft.
- add one carton of beef stock or 2 cups of stock made from beef base.
- Then add all other ingredients, except the pasta, bring to a simmer and let simmer for at least and hour.
- In a separate pot, cook pasta in beef stock.
- Then when ready to serve, place pasta in the bottom of bowl and serve with a crusty bread.
- This is really good and even better the next day!!
- (I think I may even try this with sausage or ground turkey, too!)
