Cranberry Spinach Salad

- 3/4 c. almonds shopping list
- 1 Tbsp. sugar shopping list
- 1c. dried cranberries shopping list
- 3 T. toasted sesame seeds shopping list
- 1 T. poppy seeds shopping list
- 1/2 c. sugar shopping list
- minced onion to taste shopping list
- 1/4 tsp. paprika shopping list
- 1/2 c. white wine vinegar shopping list
- 1/4 c. cider vinegar shopping list
- 1/2 c. olive oil shopping list
- red onion, sliced thin shopping list
- Small can mandarin oranges, drained, or 2 fresh oranges, segemented shopping list
- 1 bag baby spinach shopping list
How to make it
- Toast almonds in heavy skillet. When toasted, add 1 Tbsp. sugar, cook till almonds are coated and candied. Cool.
- Whisk seeds, sugar, seasonings, vinegars and oil. Chill 1 hour or longer to let flavors develop. Season with salt and pepper as necessary
- Toss spinach, almonds, cranberries, sliced onions and oranges in large bowl. Pour dressing over, toss to coat.
