How to make it

  • 1. In a large mixing bowl, beat eggs and mix in milk and vegetable oil.
  • 2. Add dry ingredients and stir until most of the lumps are gone. Do not overmix the batter because this overdevelops the gluten, resulting in rubbery pancakes.
  • 3. Grill on griddle or pan, using shortning as needed to prevent sticking. Pancakes are ready to flip when the majority of bubbles on the surface don't close up after they pop.
