How to make it

  • Slice the pears thin & toss in a bowl with lemon juice to prevent discoloring.
  • Drain & toss again with 4 T white wine vinegar.
  • Put 1/2 C greens on each of 4 plates.
  • Divide pear slices among 4 plates & drizzle with olive oil.
  • Remove cheese from refrigerator & slice thinly with a serrated knife. Arrange sliced cheese over the pear mixture. Use as much as you like but don't overwhelm the pears, just accent them with the cheese.
  • Taste & add more wine vinegar if needed.
