MINTED MIXED MELON SALAD

- 125g (4oz) caster sugar shopping list
- 2-3 level tablespoons chopped fresh mint shopping list
- 1 small orange-flesh melon, eg, charentais, de-seeded and peeled shopping list
- 1/2 watermelon, peeled shopping list
- sprigs of mint, for decoration shopping list
How to make it
- Pour 150ml (1/4 pint) water into a small pan and add the sugar.
- Place the pan over a medium heat and stir until the sugar dissolves.
- Bring the mixture to the boil and boil it rapidly for 2-3 minutes to get a light syrup.
- Remove pan from heat and leave syrup to cool.
- When cool stir the mint into the syrup.
- Cut both types of melon into cubes and place into a suitable container and pour the syrup over and turn the melon cubes in the syrup to coat them.
- Cover the melon and seal the container, then chill it well.
- Wash the sprigs of mint, and shake off excess water, and use to decorate the melon just before serving
