How to make it

  • Pour 150ml (1/4 pint) water into a small pan and add the sugar.
  • Place the pan over a medium heat and stir until the sugar dissolves.
  • Bring the mixture to the boil and boil it rapidly for 2-3 minutes to get a light syrup.
  • Remove pan from heat and leave syrup to cool.
  • When cool stir the mint into the syrup.
  • Cut both types of melon into cubes and place into a suitable container and pour the syrup over and turn the melon cubes in the syrup to coat them.
  • Cover the melon and seal the container, then chill it well.
  • Wash the sprigs of mint, and shake off excess water, and use to decorate the melon just before serving
