How to make it

  • 1 Slice each potato in half and poke a few holes in skin side
  • 2 Place in heavy resealable plastic bag
  • 3 In bowl ,whisk olive oil,lemon juice,garlic,oregano,thyme and kosher salt,pour over potatoes.
  • 4 Seal bag,turn to coat. Place in refrigerator for 2 hours
  • 5 Soak bamboo skewers in cold water 30 mins.(I used metal skewers)
  • 6 Remove potatoes from bag and discard marinade.
  • 7 Skewer each potato with flat side facing down
  • 8 Preheat grill to med.and oil the grates
  • 9. Place potatoes flat side down on grill
  • 10 Do not close top and keep eye out for flare-ups
  • 11 Cook for 20-22 mins or till golden brown(I cooked for 10-12 mins because I par-boiled potatoes)
  • 12After cooking,brush wit melted butter(not necessary and season with more salt and pepper.
  • I did turn potatoes halfway through
