Greek Pastitso (Pasta-Meat Bake)

For the pastitso:
- 2 lbs. ground beef (80/20) shopping list
- 1 lb. ground pork shopping list
- 1 lb. box rigatoni or ziti pasta (cooked al dente) shopping list
- 1/2 a large onion (diced) shopping list
- 14.5 oz. can diced tomatoes (drained) shopping list
- 2, 15 oz. cans tomato sauce shopping list
- 2 Tbsp tomato paste shopping list
- 1 clove garlic (minced) shopping list
- 1/8 tsp pepper shopping list
- 1/4 tsp cinnamon shopping list
- 1/2 stick butter at room temperature shopping list
- 1/4 c. freshly grated parmigiano Reggiano cheese shopping list
- 1/4 c. freshly grated romano cheese shopping list
- 2 Tbsp olive oil shopping list
- 3 " deep 9" x 13" baking pan, or larger shopping list
- Large skillet or saute pan shopping list
- aluminum foil shopping list
For the custard topping:
- 6 eggs shopping list
- 6 Tbsp flour shopping list
- 6 Tbsp olive oil shopping list
- 3.5 c. milk shopping list
- 1 Tbsp butter shopping list
- Large saucepan shopping list
- Large mixing bowl shopping list
How to make it
For the pastitso:
- While the pasta is still hot, toss the in the 1/2 stick butter and cheeses and set aside.
- In the saute pan, heat the olive oil and cook the onion until it begins to soften.
- Add the meats, seasonings and garlic, and brown the meat.
- Add the diced tomatoes, paste and sauce, and cook together for 5 to 10 minutes, or until heated through and thick.
- Preheat the oven to 350 degrees.
- Line the pan with a single layer of the pasta mix, then a layer of meat. Continue this until all of the ingredients have been layered.
- Cover with aluminum foil (if not using the "custard") and bake for 30 minutes.
For the custard topping:
- Make the layered pastitso and then preheat the oven to 350 degrees.
- Beat the eggs together in a large mixing bowl.
- Make a roux by combining the olive oil and flour in the saucepan, over medium heat, and whisking for 3 minutes.
- Whisking constantly, slowly add the milk to the roux and whisk until thick and smooth. Remove from heat and mix in the butter until melted.
- Whisking constantly, slowly add the white sauce to the eggs.
- Pour the mixture over the top of the pastitso and bake, uncovered, for 35 to 40 minutes, or until the custard is set.
