How to make it

  • For the pastitso:

  • While the pasta is still hot, toss the in the 1/2 stick butter and cheeses and set aside.
  • In the saute pan, heat the olive oil and cook the onion until it begins to soften.
  • Add the meats, seasonings and garlic, and brown the meat.
  • Add the diced tomatoes, paste and sauce, and cook together for 5 to 10 minutes, or until heated through and thick.
  • Preheat the oven to 350 degrees.
  • Line the pan with a single layer of the pasta mix, then a layer of meat. Continue this until all of the ingredients have been layered.
  • Cover with aluminum foil (if not using the "custard") and bake for 30 minutes.
  • For the custard topping:

  • Make the layered pastitso and then preheat the oven to 350 degrees.
  • Beat the eggs together in a large mixing bowl.
  • Make a roux by combining the olive oil and flour in the saucepan, over medium heat, and whisking for 3 minutes.
  • Whisking constantly, slowly add the milk to the roux and whisk until thick and smooth. Remove from heat and mix in the butter until melted.
  • Whisking constantly, slowly add the white sauce to the eggs.
  • Pour the mixture over the top of the pastitso and bake, uncovered, for 35 to 40 minutes, or until the custard is set.
